Ike, I have some raw-milk cheddar made from the milk of cows grazing in Hunterdon County (NJ); the cheese itselfy is made in Berks Co., PA. Then I have some plain ol' fresh chevre from The Cheese Guy Co. (freebie I got at work), very good. I have some Italian Grana Padano Riserva for grating etc. Nevat (sheep) made by Josep Cuixart in Spain. Vallee d'Aspe Brebis (Ossau-Iraty) from the French Pyrenees. And some Cabot Clothbound Cheddar aged in the cellars at Jasper Hill (VT). I think that's it.

Yeah, I'm submitting another vote for Robedoor. And this Sylvester Anfang II is pretty kickass, too. perfect soundtrack for the day.

Ike, I only bring home great cheese! nevat looks sort of like a big cloud of a cheese, prob about 3 kilos or so. Fluffy white outside (that would be penicillium candidum, aka "bloomy rind"), inside is fairly soft but a little flaky, too. just beneath the rind sometimes it has a creamy texture. it tastes on the mild side, earthy, mushroomy, a little grassy from the sheep milk and the bloomy rind.
