  8:31am Brian in UK:

Good luck annie.
  8:39am annie:

it's a pretty fun job, i sell fresh roasted nuts..they're not organic, but the owner has a nice set-up and uses no oils at all. so, it's a job. ..and i love the open farmers market style of selling, and i can schmooze.. hehe
  8:45am listener james from westwood:

Good Friday, all! And congrats, Annie, on scoring the job!
  8:45am Merv:

@Annie- in Asheville, right? Are you set up on umm... that walking mall type thing, Grove Arcade or something like that? My sister's up there-- what a town!
Avatar Swag For Life Member 8:54am Doug Schulkind:

You gotta be nuts to take that job, Annie. (OK, I apologize.)
  8:55am chris in durban:

Glad you could make it out of your darkened room Doug
  8:55am Wendy del Formaggio:

Hey Annie! nuts go well with cheese. :-)
Avatar Swag For Life Member 8:56am Doug Schulkind:

Oh no, Chris. The room is a murky as ever. At least it was the last time I opened my eyes.
  8:58am ndbob:

morning Doug and everyone!
  8:58am Brian in UK:

Wendy, nuts go well with this programme. Ever tried to make your own cheese?
Quit sniggering at the back.
  8:58am ndbob:

glad you got a job Annie!

You too, Wendy dear.

Well hi there Mr. Drummer Doug and all ya'lls
Avatar Swag For Life Member 9:04am Doug Schulkind:

It is the man with the Van!
  9:04am annie:

Avatar Swag For Life Member 9:05am Doug Schulkind:

Annie, your ass and my radio resent that remark.
  9:06am dc pat:

people! It's just 9:06! Kindly hold off chatting until the appointed hour!! SHeesh!
  9:06am Wendy del Formaggio:

Brian, I have not tried to make my own cheese. well, last month I did pitch in making cheddar with the cheesemakers here at work. That was HARD WORK. Cheddaring is probably the most labor-intensive cheesemaking process. Oy vey!
  9:07am Wendy del Formaggio:

Annie, I'd love to know the recipes! But really, for lazy people all you have to do is eat a piece of cheese and some nuts alongside, and there's a nice snack for ya.
Avatar Swag For Life Member 9:09am Doug Schulkind:

Good morning, dc pat. I have just one word for you: HOLT-BY! HOLT-BY! HOLT-BY! OK, that's three words.
  9:09am T in London:

"blessed are the cheesemakers"
  9:10am annie:

i'm going to take my ipod with me and see if i can get internet... man are spoiled or what? yeah word up wendy, i hear ya.. there's a cheese stall right next to us. and to our left is a yerba mate stall.. he also sells a chili flakes-infused honey.. hmm.. not too bad really..
Avatar Swag For Life Member 9:10am Doug Schulkind:

Cheddaring as a verb? You are a baddass, Wendy!
  9:11am Brig. Gen. Anthony McAuliffe:

NUTS!
  9:11am annie:

wendy someone has to go to some effort to actually place the nut ON the cheese.. i say a small toaster oven, assorted nuts, cheddar.. boom! oh!! i so miss my manouri cheese, no one around here knows what it is.. boohoo!
  9:11am Brian in UK:

Sticking copper rods into Stilton would be my preferred option. Stiltonesque.
  9:12am Parq:

Wen, are they sending you up to the factory in Grafton? Damn, I love that little town.
  9:12am dc pat:

way to go annie, sounds like a nice gig--outside and all.

"HOLT-BY?" a quick googling tells me that is a sports reference...

Nuts at ease. In these slacks, I doubt it.
Avatar Swag For Life Member 9:15am Doug Schulkind:

triish, you'll always be triiish to me.
  9:15am Van in DC:

News came out yesterday, also, that Jonathan Frid died a week ago, on Friday the 13th. Not familiar? He was the original "Barnabas" on Dark Shadows. Someone wryly commented that it was the remake trailer that killed him. He was 87.
  9:16am dc pat:

only problem with Asheville is, it's in the south...
  9:18am Van in DC:

Saw a funny card: Dick Clark has died. We can no longer ring in the New Year. Well played, Mayans. Well played.
  9:19am annie:

pat, it's not that bad, really, already moogy, but well. what the hell...

  9:22am annie:

  9:23am Brian in UK:

Good long album title, Doug. Great set. Schmooze on, annie.
  9:24am dc pat:

the weather's one thing but you're also surrounded by insanity. It's funny Asheville does seem like a little town in Vermont or something.
Avatar Swag For Life Member 9:24am Doug Schulkind:

Have fun Annie!
  9:25am Wendy del Formaggio:

Doug: Yup, cheddar is a verb!
Parq: No sir, we make nearly all our block cheddars here in the Brattleboro plant, where I'm at. Up in Grafton they make some block cheddars, but those vats are mostly used for our new cave-aged line, since we put the caves up in Grafton.
Oh, and these are cheese caves, not caves where bears and bats live, people! :-D
  9:25am still b/p:

Send a photo of yourself workin' your nut station, annie, and see who'll post it in a playlist.

My folks were pretty strict with TV rationing. So it was strange to suddenly have an allowed Dark Shadows habit for a while at 4:00 PM weekdays.
  9:27am Van in DC:

My mistake. Typo. "Barnabas" Irene played his "I, Barnabus" on her last Halloween show.
  9:27am Parq:

Glad you brought it up, Wen. I've seen signs for cave cheese in Union Square, and wondered what the heck that is. As for Jon Frid, I say it was those posters with Mr Depp looking like a skinny Lou Reed that killed him.
  9:27am Paul Sherratt:

Quick note. The 4am finish has paid off already.
Avatar Swag For Life Member 9:29am Doug Schulkind:

Thank you (yawn) Brother Paul.
  9:30am Wendy del Formaggio:

Parq: Cave-aged means the cheese was aged in a room with a temp and humidity specific to the type of cheese it is. If a cheesemaker is making different types of cheese -- washed-rind, soft-ripened, natural rind or clothbound, blue -- there will be different caves for each type because they require different environments, and each has specific molds and bacteria that shouldn't be introduced to the other cheeses. Dig?
Avatar Swag For Life Member 9:31am Doug Schulkind:

I fixed your typo, Van. This is a full-service comments board!
  9:31am joe:

'ello folks
  9:32am Van in DC:

Thanks :)
  9:33am Brian in UK:

Wendy, it's not a Roquefort 'cave'.
  9:35am Brian in UK:

Washed-rind in anything specific?
  9:36am Wendy del Formaggio:

Brian, no. Roquefort is aged in an actual limestone cave. And there's some Emmentaler and Gruyere that's being aged in the Kaltbach caves, but usually a "cave" is just a temp/humidity-controlled room. There are a few cheesemakers who build or maintain stone caves, but keep in mind: any indigenous molds, yeasts and bacteria will jump right on the cheese.
  9:36am listener james from westwood:

johnny depp throws a mean ian curtis vibe in his barnabas makeup. just me or anyone else? would make sense w tim burton's goth eye guiding things.
  9:36am monica:

Roll dem R's, Doug! Good morning, Drummer Some peoples.
  9:37am Wendy del Formaggio:

Brian, washed-rind cheeses are washed in a solution that changes the surface pH. Brine, booze, that sort of thing.
  9:38am Parq:

Dig it the most, Wen. Could you find some aging preppie and age cheese in his Man Cave? And Good Good AM to the marvelous Miss Monica.
  9:38am Van in DC:

Wendy, is this stuff true? Being overblown maybe?

  9:38am Ben:

Gigli?
  9:39am Artie:

G'morning all! I haven't measured my surface pH yet this morning, but this is radio and that shouldn't matter.
Avatar Swag For Life Member 9:40am Doug Schulkind:

An opera joke! Well played, Ben(iamino).
  9:41am Brian in UK:

I think Roquefort happened by accident originally. Too many natural yeasts in the air maybe hence sourdough bread.
  9:42am Paul Sherratt:

Have to admit, I'm a huge fan of ' Unidentified '
  9:43am Brian in UK:

Artanoon Mr Sherratt, shower dodging with the dog walking?

This one's for you, then, Paul.
Avatar Swag For Life Member 9:46am Doug Schulkind:

Morning Artie!
  9:46am Wendy del Formaggio:

Van, partly overblown, partly true. The headline is sensationalistic. rennet is harvested from the lining of the calf stomach (I think the 4th stomach?), it's true. But yes, most "microbial enzymes" in this country are GMO. Not all, though.
  9:47am Artie:

The cat's versatile. I'll give 'em that.
  9:47am Brian in UK:

Hugo, do like gjetost, nice whey/fudge taste.
  9:47am Artie:

Yay - Toast!!!
  9:48am Wendy del Formaggio:

Hugo, I NEVER see Brunost (brown cheese) in the US, at least in the NYC market. Always Gjetost or Ekte Gjetost.
  9:49am Wendy del Formaggio:

Artie: hahaha, yeah!
  9:50am Wendy del Formaggio:

This Paddy Killoran is GREAT. My feet are dancing under my desk.

Avatar Swag For Life Member 9:51am Doug Schulkind:

Wendy, your feet remind me of a joke.

What did the German wine makers say at the end of a long day stomping grapes?
  9:53am Wendy del Formaggio:

Doug, I dunno.
  9:54am Hugo:

I think brunost may be hard to find.

For expats, bringing brunost from home is the most precious present you can think of.

You do see this one, though, I would think.

Hugo: Jarlsberg is EVERYWHERE!

Doug: UGH! hahaha
  9:56am monica:

Hey there, Parq! It's so great to have a certified cheese-monger onboard. Wendy, are you familiar with ash-coated Beekman 1802 Blaak from ? A friend told me that the ash irreperably stained his counters and cutting boards. More here: http://bit.ly/HXUBUb

  9:59am Van in DC:

all-Irish would be just fine by me :)

@Doug - My cats favorite junk food - their McDonald's french fry equivalent, if you will - is Friskies SHREDDED Turkey & Cheese (purple can). A very special treat for my beasties. They can has cheez.
  10:24am Wendy del Formaggio:

Doug: Some people really just don't like tomatoes.
Holly in NC: Hi! I don't know Harbison. I'll have to look it up.
Monica: Ashing the rind is an old French trick -- you'll see it on some smaller goat cheeses, but usually ones that aren't meant to be cut. It's not supposed to add to the flavor at all. I don't think the Beekman Boys gave much thought to cheesemongers when they made their cheese. I have no idea what they were thinking, but I'm confident it wasn't anything really cheese-related.
Avatar Swag For Life Member 10:27am Doug Schulkind:

I used to ash the rind when I was younger and drunker. But never with smaller goats.

Brian, since I don't have the book I can't confirm. but Rance is gonna have to fight it out with the EU. Their PDO requires a line of charcoal to bisect the cheese.
Avatar Swag For Life Member 11:04am Doug Schulkind:

You're gonna miss the Charlie Haden, Marc. Can you wait five minutes?
  11:05am marcury:

Five works.
  11:05am Webhamster Henry:

@marcury I'm in New Paltz myself. What's for lunch? There's some nice artisanal cheese in Ulster County.
  11:07am marcury:

Henry, I'm Chef at Market Market in Rosendale. Ever been? We have Korean BBQ Short Ribs and Shrimp tacos with Avocado Lime Cream for Dinner.
  11:08am Brian in UK:

Well I can only quote what he saw in 1987. There were still a few still making it in the traditional way. Though, traditional happened by accident according to hearsay, the cheese was left out overnight waiting for the next days curd by the fire when soot fell down the chimney.
  11:10am Webhamster Henry:

@marcury: Sure I've been there - you have that tasty Bahn Mi and Bi Bim Bap. I also play there - I'm in Mamalama. http://www.mamalamaband.com .
  11:10am jill:

just checking in, hello all. Marcury, is Bywater Bistro still up and running? Fabulous place.
  11:10am Van in DC:

You know how they say don't go shopping on an empty stomach...? This show/comments is kind of like that. Yeah. :)
  11:10am Wendy del Formaggio:

Brian, cheese myths are always so funny. The legend I always heard was that the ash was put on the evening's milking to keep flies off of it. About as appetizing as the chimney detritus. :-D
  11:12am marcury:

Henry, very cool, I'll check out the band tonight after work, and yes we do have both those delicious items.

Jill, yes as far as i know.
  11:12am Andy S.:

Charlie's own "Oh Shenandoah" and his daughter's "Fields of Athenry" are my favorite tracks on this album. I interviewed Charlie for the press bio I wrote at the time of RAMBLING BOY's release.
  11:13am Brian in UK:

marcury, what time do you close?
  11:13am holland oats:

better late than never? h'lo folks
  11:13am Paul Sherratt:

Doug, gentle warning together with a double-shot .. but after Mr Earle's ' Pilgrim '. What do you take then ?
  11:15am marcury:

Brian, 10:00 Friday and Saturday, 9: Weds, Thur and Sunday.

Doug, of course worth the wait, Thanks!

Have a great day all!
  11:15am Brian in UK:

Absinthe, Paul.
  11:17am northguineahills:

I never knew Charlie did an Americana record. I know his daughter's music is closer to that.

  11:18am ndbob:

I remember hearing gone of those young Charlie Hayden recordings.. from the 365 Days Project maybe?
  11:19am Van in DC:

Good luck with that, Germany.
Avatar Swag For Life Member 11:20am Doug Schulkind:

There is one known recording of Charlie at age four or so singing as "Cowboy Charlie" with the Old Haden Family Show. The track is included on Haden's "Rambling Boy."
  11:23am triish:

You know, I never knew I enjoyed music from Benin before this here radio show. I didn't even know of Benin.
Avatar Swag For Life Member 11:24am Doug Schulkind:

At 12pm, I will switch over to hosting today's rebroadcast of Steinski's A ROUGH MIX. The playlist/comments for that show will be here:

bit.ly...
  11:25am Brian in UK:

These are the known unknowns.

Best apples to eat with cheese?
Avatar Swag For Life Member 11:26am Doug Schulkind:

triish, I believe the modern Benin comprises much of the territory of the old kingdom of Dahomey. Does that help?
Avatar Swag For Life Member 11:27am Doug Schulkind:

This Toe Niongui can be found here:

bit.ly...
  11:31am Brian in UK:

triish, Orchestre Poly-Rythmo de Cotonou seen these boys live, tops. They can play all styles Afrobeat, soul etc with a brass section you could slice cheese with it was so sharp.,
  11:32am triish:

hm. Interesting.
(and confusing -- there's a Dahomey Nat'l Wildlife Refuge just southwest of Cleveland, Mississippi)
  11:32am Van in DC:

Oh hey, by the way Doug, is that Cumbia album the same one that was one of your giveaways during the marathon?
Avatar Swag For Life Member 11:33am Doug Schulkind:

I'll have to go back and check, Van. There are a number of stellar Cumbia compilations that have come out the past few years.
  11:34am Van in DC:

Oh no worries. I'll find out when my stuff arrives ;)
Avatar Swag For Life Member 11:43am Doug Schulkind:

Van, I just checked my old playlist. No, the Cumbia prize I gave away was a 3-CD set.
  11:44am ndbob:

This is one of several good records Pat Powdrill made.
  11:45am Van in DC:

Ah, okay, thanks. :)
  11:47am joe:

Sorry had to step away for a few minutes to hear Willie Nelson's new single for 4/20.
  11:48am Holly in NC:

@Doug - That horrible grinchy neighbor in your old 'hood needs to find a who or 2 to melt his/her nasty heart! What an a#hole.

@Wendy (going way back) - Harbison is a bark-wrapped not-quite runny round of slighty funky rindy deliciousness made/caved at Jasper Hill. Who do you work for? (I was guessing Cabot, Grafton or Shelbourne) And if y'all have bad blood with Jasper Hill I apologize in advance. ;-)
  11:49am Van in DC:

I may have to catch the next show (Steinski I mean) on archive. I'm too freaking hungry now from this show :)
Avatar Swag For Life Member 11:50am Doug Schulkind:

Maybe some cheese, Van?
  11:50am Brian in UK:

Van nibble some toes they grow back. Honest.
  11:51am Wendy del Formaggio:

Holly, no bad blood w Jasper Hill. I like their cheeses and I've had pleasant chats with Mateo in the past. Harbison sounds like Winnimere, another cheese of theirs which I ADORE. I'll seek out Harbison, thanks :-)
  11:52am Brian in UK:

Don't have to be yours.

Drummer, excelled yourself today.
  11:52am Van in DC:

oh noes toes!

Definitely, there shall be cheese involved.
  11:53am Brian in UK:

Toe jam football.

Time to go, methinks.
  11:54am Holly in NC:

@Wendy - Winnimere is the washed rind version of Harbison! :-)
  11:55am ?:

is this Paul Jackson, as in, the bass player that played with Herbie Hancock? Or is that someone else?
  11:56am Artie:

@Holly: Pray tell where this Harbison is retailed in NC?
Avatar Swag For Life Member 11:56am Doug Schulkind:

The subject of the final song may put the kibosh on your appetites.

@?
No, different Paul Jackson.
Avatar Swag For Life Member 11:58am Doug Schulkind:

STEINSKI SHOW PLAYLIST....STEINSKI SHOW PLAYLIST

Is here: bit.ly...
  11:58am Van in DC:

ha ha Doug. You have done that on purpose methinks. ;)
  11:58am ?:

consider my appetite kiboshed
  11:58am Wendy del Formaggio:

Poo Poo Man?!?! hahahahaha. What on earth was he thinking when he cut this track? Oh wait, I don't wanna know...
  11:59am listener james from westwood:

i prefer to think of it as puu puu and chase my cheese lunch w a chinese dinner.
  11:59am Van in DC:

Enjoyed the show! Thanks Doug!
  11:59am listener james from westwood:

much love for the fine show and the cheese-tacular comments!
  12:00pm ndbob:

excellent show as always Doug!
  12:00pm Artie:

Thanks Doug!
  12:02pm Van in DC:

Bringing up the rear...I see what you did there.
  12:02pm ?:

hey, Doug, just tuned in (for the first time in many moons). great show, and the mic sound has improved from the last time I listened . . .
Avatar Swag For Life Member 12:02pm Doug Schulkind:

Thanks everybody!
  12:02pm Brian in UK:

Amazing how much louder the stream is than Scott's show. I know it has been said before.

Good week everyone.
  12:02pm Van in DC:

Peace. Love. Trombone.
  12:06pm Holly in NC:

@Artie - Whole Foods (& I assume Southern Seasons if you're near Chapel Hill). Our WF doesn't always take good care of their artisan cheeses, so keep your receipt. But if all is well it should be *delicious* !!!! :-)
  2:09pm Artie:

Thanks Holly, from Artie in Raleigh.
  4:57pm Bob in Charlottesville:

I'm listening a few hours behind because of a busy morning, but wanted to point you to my favorite version of Tin Tin Deo, featuring the song's author, a bass player, and no one else: http://www.youtube.com/watch?v=jHQaUNeErVM
  5:19pm Doug Schulkind:

Bob, that is stunning, thanks. A little Googling reveals that this bass player went on to perform with...Grandmaster Flash, in the '70s.
