@Carmichael the predominant ethnic groups in North Dakota - particularly here in central North Dakota are - "Germans from Russia" and Norwegians - Welk never spoke much English until he was around 20

Sauerkraut and Canadian bacon was the house special of an Iowa pizza joint I was in a few decades ago, and although I'd never had any 'kraut before, I ate and I liked it...I LIKED it.

I eat a decent amount of tofu. How does tempeh differentiate itself?

It is fermented soybeans. Kinda a little bit blue cheesey. Only way I eat tofu is if it has been frozen. Freezing gives it a firmer texture. Better for scrambles or barbecues that way, to me anyway.
