oh man, incredible topic here. years ago my friend and roommate got a job at a creamery and learned all about making cheeses, and one day he came home with an eronmous wheel of experimental cheese he'd designed... we ate it over several weeks as it aged, changing flavor along the way.

I once knew a dude who was complaining about someone who put buttered bread into the community toaster, which led to a concrete-like glob of butter & crumbs at the bottom. A week later, I joked to him that my new invention was frozen toasted cheese sandwiches that pop right into the toaster.

How do you tell the bad mold on blue cheese? Is it fuzzy so you can see it's recent? Does that apply to all blue cheeses (including, say, Gorgonzola), or only the one we conventionally call by that name?
