I can't stand brand named Sriracha, it has too much sugar in it. I've had other types of the rooster sauce that weren't saturated in sugar that I like. Found a good Asian market here and got decent Vietnamese chili sauce. Need to make my own from scratch in the new year.

@βrian: Exactly, and it hurts my GI track. I only use hot sauces that use all natural ingredients and are in glass bottles, sure, they may potentially go bad, but that's never a problem w/ me (i go through them really fast).

There used to be a "Hot stuff Spicy Food Store" on Sullivan St in the 90s. You could do some good taste tests. Hotter than hell sauce was a fave of mine, an Indonesian one. I also liked the jalepeño lollipops.

Heh, turn up the 808. The whole line is -08, from not hot to (808) kaboom! Naga Jolokia. I gave my 12YO niece a taste of 708, which is hot. She liked it, so with adequate warning I offered 808. She dipped her finger and tasted a drop. Eyes grew wide. I commend her courage.

Hot peppers need to be approached gently, with the heat level providing a high note in the food's flavor, not a shrapnel wound. But with no heat at all, it's like listening to an orchestra with no high notes.

@annie: I add various chilies (dried chiplotles and others for spice, and fire-burned poblanos for flacor). I also use a cumin and a wee bit of coriander, and agave syrup for the sweetness. Otherwise, it's the usual.

The thing with Bigfats is the melding of flavor and sheer, nearly brutal heat. For flavor appropriate to many dishes, 708 is the go-to. One adds 808 for a layer of smoke and Scoville ecstasys.

"Cram a jazz musician in a studio with an authentic African folk ensemble, and what's the typical result? Ersatz "world jazz" suitable for serenading Banana Republic shoppers, and little else. I usually avoid records like this and would have but for the presence of trombonist Roswell Rudd. With his hallmark speaking-through-the-horn sound, he blurts out his thoughts as if skanked up on truth serum. Overlooked and underappreciated, Rudd has appeared on precious few recordings. This one, as Rudd fans would expect, is magnificent."
