@fred: I'm pretty sure he was (there was a dancer there, but I only knew the names of the guys on the Ethiopiques Recs). It was outdoors (WFMU was there), and rainy (out of dozen of outdoor concerts there, only one where it wasn't raining, and it was overcast)

Dean:

The late, great Huell Howser, a California historical treasure and host of California's Gold, did an episode about LA's Little Ethiopia around Fairfax and Pico, a corner made infamous during the rioting following the Rodney King verdict. I was having lunch in one of the Ethiopian restaurants there one weekend when Howser walked in to scope the joint. Have yet to watch the episode, though.
  4:40pm
melinda:

@chresti according to the recipe in my fermentation book it's just water, flour and maybe salt, left to ferment a day or more. Then cooked on a skillet. I'm putting it off because I have to find teff flour.
  4:44pm
chresti:

I’ve seen teff, not the flour, tho. Maybe it can be ground...
Avatar Swag For Life Member 4:45pm
David D:

Sounds good, Dean, I'll have to ask for the name of the place at some point...
Avatar Swag For Life Member 4:46pm
David D:

(assuming the place is in fact good)
Avatar Swag For Life Member 4:47pm
coelacanth∅:

the teff does not need to be ground. it's so tiny it basically makes dough in it's natural form.
Avatar 🚂 Swag For Life Member 4:47pm
Webhamster Henry:

Teff is so tiny - it's practically flour! I love Ethiopian food! but there isn't any around here (Mid Hudson Valley ,NY)at all.
  4:49pm
chresti:

We’ve been to a nice Ethiopian restaurant on fairfax, years ago, it had a market, too.

There’s a place on San Pablo ave, near the Oakland /Berkeley border
  4:51pm
chresti:

That’s great @Dean
Avatar Swag For Life Member 4:52pm
David D:

Henry: Not too much here either, again I think Berlin is a better bet in this part of the world.
  4:53pm
chresti:

Also on Hollywood Blvd - a regular favorite Ethiopian place, way back when
  4:53pm
Dean:

I can't even remember the name of the place, but plenty good ones remain: https://www.theinfatuation.com/los-angeles/guides/a-guide-to-eating-in-little-ethiopia

Yep, @chresti, lots of good options in these parts, too. Now if only I could get my kids to test their palates.
Avatar 🚂 4:54pm
northguineahills:

Matty Warwick, is that you???
  4:56pm
melinda:

I might try using whole teff but I'd like to follow the recipe specifications first. There is teff flour online if I can't find it locally.
  4:57pm
chresti:

Dean just tell them they won’t like it until they’re older...;
  4:59pm
chresti:

My son outdid us in the spicy food dept by the time he was 11
  5:02pm
chresti:

Delightful indeed!
Avatar Swag For Life Member 5:04pm
coelacanth∅:

melinda yeah the restaurants might use flour -for our "refined" palates!
i used to work for someone who made injera with whole teff (which we sold at his store) and said he saw no point in grinding it, even though he had a stone grinder at home. i never tried his, but he claimed the lack of need to grind it, along with a fast cooking time, were the reasons teff became popular in ethiopia in the first place.
Avatar Swag For Life Member 5:05pm
coelacanth∅:

...(but i agree about following instructions the first time)
Avatar 🚂 Swag For Life Member 5:05pm
doctorjazz:

Never even heard of teff, sounds interesting.
Avatar 🚂 5:07pm
northguineahills:

I can barely manage cooking Indian cuisine, I need to master that first before moving on to Ethiopian.

I outdid my parents in spice dept by the time I was 6 (the first time I tried Tobasco). When I met my wife (en Mexico) her friendsds were amazed I'd eat a serrano chili, and then down a big shot of mezcal (my wife still complains I make my food too spicy).
Avatar Swag For Life Member 5:08pm
coelacanth∅:

i don't even remember what it tastes like. only had it 2-3 times, at restaurants in nyc in the 1980s.
Avatar Swag For Life Member 5:09pm
coelacanth∅:

ngh your wife might have a point there
Avatar 🚂 5:15pm
northguineahills:

@coel: considering my tolerance is up to rubbing my eyes after cutting ghost peppers, w/o flinching, you might be on to something (this extreme tolerance is rather recent, I have more chilis then I know what to do w/).
  5:17pm
Ike:

@NGH@4:33, agreed! Did we discuss this before? S. Orange has amazing Ethiopian.
  5:19pm
chresti:

Teff is a grass, but it can be cooked like a cereal. It tastes like polenta, (to me), rich in iron and protein. Very easy to cook@doc
