Over many years in the Weehawken house, Pannonica like to play a kind of parlor game with her musician friends. She would ask them, "If you were granted three wishes, to be instantly granted, what would they be?"
According to Pannonica, when she posed this question for the first time to her closest compatriot, Thelonious Monk, "he was pacing back and forth, and he paused for a moment to gaze out across the river at the New York skyline. Then he gave me his answers."
Here were Monk's answers:
"To be successful musically"
"To have a happy family"
"To have a crazy friend like you!"
"But Thelonious," Pannonica responded, "you have those already!" He just smiled and began pacing again.

generous 1/2 cup white sugar
generous 1/2 cup dark brown sugar
1 tablespoon blackstrap molasses
1 tablespoon honey
1 large egg
2 teaspoons vanilla extract
1 cup all-purpose flour
1 cup rolled oats
1/2 teaspoon kosher salt
1/2 teaspoon baking powder
1 & 1/2 teaspoons ground cinnamon
1 generous cup raisins
1 generous cup chopped English walnuts
With a hand mixer, cream together the butter, white sugar, brown
sugar, honey & molasses.
Mix in the egg and vanilla extract and set the wet ingredients
aside.
In a large bowl whisk together the flour, oats, salt, baking powder,
and cinnamon.
Mix the dry ingredients into the wet ingredients, stir in the
raisins and walnuts.
Preheat the oven to 375 degrees F. Place rack in center of oven.
Arrange a dozen at a time (3x4) on a cookie sheet with a silpat.
Bake on second highest rack on convection for 13 minutes, rotating the pan halfway through, if your convection isn't perfectly even.
Cool three minutes on the cookie sheet before moving to a cooling
rack. Cool till completely cooled. DON'T EAT A WARM ONE!
