We had a terrible storm in the Northeast earlier this week. Here in NJ we had lots of flooding. People had to be evacuated from their homes. Some places got 3-4 inches of rain and wind gusts around 50 mph. I felt the house shake around 3 am on Monday. It knocked over lots of things on the street and around our house.

Hubby is busy prepping the red cabbage for dinner, and is enjoying the music, as am I. Hope the weather clears, and things get way better and sunnier. Also will start some prep for the rouladen and bread dumplings :)

Shredded, a peppercorn & clove studded onion (only 2 or 3 cloves), bay leaves, 1/4 cup white vinegar and 1 cup of boiling water to set the colour. Mix well, nestle in the onion. Cover the top with sliced apples again to keep the colour. Bring to a simmer and cook for at least an hour. I forgot to say add salt, but hey, add salt. Remove onion & bay leaves. Stir in the apples which should be peeled by the way. (sorry he's dictating, and clearly is all over the place). Taste and adjust the sweet and salt and sour balance, adding what's needed to taste just right.
