Obscure musical gems, avant experimentation, and classics worth rehearing. A conurbation of Leslie speakers, timbales, plungers, arch-tops, tablas, and squeaky reeds. Black ties, pork pies, Cuban boots, Nudie suits, bobbysocks, turtlenecks, and high-heeled sneakers. Jazz is the north star but it’s a wide universe, so says The Laughing Clock.

The Instant Pot is great for lentils and the like -- speeds things up considerably.

My wife bought an Instant Pot but never used it until I got her a couple cookbooks: we really like "Milk Street: Fast and Slow," we've probably made 1/3 of the recipes in there

Lentil soup is happening in the Instant Pot here. I call it my Aunt Baru Cooker. If you know, you know.

My spitball Instant Pot adjustment principle is to do the same thing I'd do on stovetop, first on saute then with lid shut, but reduce water by 1/3 to 1/2.

At some point soon, I think I'm going to get myself a little stovetop Hawkins pressure cooker. The IP is a little much for when I want some legumes as a side on short notice.

Avatar Swag For Life Member 6:32pm

↳ Kat in the chat @6:25
The cool(ing) thing with a small stovetop cooker is that you can pop it in the sink and run water over it to bring the pressure down, instead of waiting for the IP's "natural release." (Usually, if I don't care about inducing a boil, I throw a folded dish towel over the IP's vent and open it up. PSSSSHTTTTtttt-ahhh.)
