but it's wise to always check, if it's a big issue. some companies (like cabot) will tell you there's no lactose; and the general rule is: the longer it's aged, the further the lactose has broken down. but you never know if maybe some companies add something later?
i don't know. i doubt it but, to be safe.

I assume a perfect world would probably cut back hard on meat and dairy consumption, emphasize crops that are in season locally instead of sourcing stuff from across the globe, and try to get group kitchens going where people can eat cheaply and quickly but healthily

also, very little dairy, bread and flour products...

Yes! not shipping food 3000 miles would be a good start!
...also, buying food (and body care products) in bulk, reusing your own containers also would be huge.

however, there is a lot to be said for *mass-washing* of produce, rather than washing it at home. uses far less water, i assume.

definitely true. but if it's lactose... lactose is lactose. goat milk may have less (?) -so it depends how sensitive one is.
...if it's an allergy, it's the protein causing the reaction; so it can make a big difference. goat milk is more like human milk than the cows', so it's easier to digest.

If you're lactose intolerant, that typically is with bovine milk and fresh/young cheeses. In cows cheese, the lactose breaks down after a few months, so any aged cows cheese should be fine. Apparently it's the structure of the casein molecules that's the problem, so goat or sheep's milk is fine. I just take one of the lactaid tablets when necessary. There are some real good goat Goudas's out there.

I’ve always dreamt of there being community dining halls on the same level as basic healthcare and shelter and clothing being provided for all. Dining would be something like church in that it would be community building. Something society lacks severely these days.

As for wheat, it's fine if you're eating sourdough, organic whole wheat. (unless you have Celiac's). People have depended on wheat for millennia, and all bread was sourdough until the introduction of commercial yeast around 1910. Sourdough tastes better, and being fermented makes it easier to digest.

that all seems legit.
i will add however, that years ago i managed a store that sold excellent goat cheddar in bulk, and slipped into a cheese habit. i hadn't eaten much cheese in several years but thought this would be okay, but gradually it started making me feel like shit. tight congestion and foggy mentally.
i'm not lactose-intolerant and don't think i have a cassein (?) allergy; but it was just clogging my body up.

If you get a chance, read "Relish" by Lucy Knisley; chapter 8 is on cheese. There is a vignette on aging breaking down lactose. The majority of the book is about food, actually.

...the one thing i started doing is when i indulge with bread products is the next morning take some psyllium (sp?) husk with pineapple juice. i shouldn't need added fiber on top of all the salad and brown rice and beans, but it makes a huge difference ive i eat 4 slices of sourdough bread with tons of kerrygold butter!
