I like it, but the edges start to get quite oozy while the rest of the cheese remains solid. I wish that wouldn’t happen (so quickly, anyway). Cheesy in Brattleboro

	♥ 7:50pm Wendy del Formaggio: @Listener Gregalah: I think Lake's Edge is far superior to Humboldt Fog. The oozing is actually a good sign; it means the cheese isn't mucked up with stabilizers. It's a soft-ripened cheese, so it's gonna break down beneath the rind as it matures. My suggestion: buy it a little younger (firmer) and eat it quicker if you don't like that. It's not a requirement to like the ooze to like the cheese!

It's a soft-ripened cheese, so it's gonna break down beneath the rind as it matures. My suggestion: buy it a little younger (firmer) and eat it quicker if you don't like that. It's not a requirement to like the ooze to like the cheese!
