There was actually an entire Beefheart tribute album, "Fast N Bulbous." Sonic Youth did a decent "Electricity." i think it was Ty Seagull who also covered "Dropout Boogie"? Excellent version.

The 180gs' all acapella version of the entirety of "Trout Mask Replica" is truly mind-boggling.

But yeah, can't think of any other Beefheart covers off the top of my head. After the early albums, those songs are just too difficult. I mean, the 180Gs said it took 5 years to make that album.
