A viking ship appears on the horizon, a likeness of Alice Coltrane carved into its bow. Rare birds flock together to sing Francoise Hardy as soul hits. A sunset of blips and bleeps fills the air.

  10:17am
north guinea hills:

Cecile, exactly. 10 years ago, i'd be minor inconvenienced by the pain for a day and nothing else. I'd heal rather quickly. These days, not so much. Which is why I don't play competitive soccer any more, I can't miss the 9-5.
  10:18am

yeah, i'm blessed to live in an area that can feed me year round.. and cecile, sorry to hear about your leg... it's not too late to take some homeopathic arnica.. works great..

I remember seeing these guys at an outdoor rave in 1996. I thought they were weird but I do remember dancing my arse off.

I know. I've already had one knee 'scoped, I dread the day when #2 happens. So no running for me, but my old bones love the pool and the stationary bike.

Damn, Annie, I had Weleda arnica oil and gave it away. I should grab some at the health food store.

Hey, I have a food question - avocado in a curried squash/yam soup ?
Good idea or not ? I can't find a recipe reference and don't want to ruin an otherwise decent soup
  10:24am
gumby:

Sorry for being late to the comments. But Trouble I just wanted to say that I find it deliciously refreshing that bird sounds do not translate well into MP3. I just pointed out to my 2 teenage sons that a picture of wilderness, while nice, is in no way comparable to standing in wilderness.
  10:25am
Cecile:

NO. No avocado.
  10:26am
BSI:

Cecile: I know NOT of this "grace hot sauce" of which you speak! But I'm foolish enough to try anything once! I got started on the sriracha, & quickly moved up to the Huy Fong chili/garlic (with the seed hulls in the mix) -- it's nowhere near the hottest stuff on earth, but makes magic!
  10:26am
depilatrix:

trs: Great idea. Avocado will not withstand the heat however, so you need to add it after the soup is done to individual bowls. Either as whipped or chunks.
  10:26am
annie:

trs- side dish, garnish to dip maybe..
  10:27am
Priscilla:

No - the avocado will mess up the texture of the soup. Mash it up & spread it on some toast.
  10:27am
north guinea hills:

Grace is a wonderful basic Jamaican vinegary hot sauce that kicks most commercial hot sauces arses.... Jamaican choice sauces are also purty darn good if you're going for decent heat w/ flavor. I usually make my own sauces w/ fresh habanero & garlic + whatever else I have lying around, depending on the dish I'm making...
  10:27am
depilatrix:

I freak out every time I have to add two digits to post. I never get them right the first try either. Math-trauma anyone?
  10:27am
dc pat:

yeah, I don't know if I'd mix avocado with anything but salt

Hot sauces: El Yucateca, Sriracha, Tabasco
  10:28am
trs:

Thanks. Got it. Avocado's only good cold/room temp. Gazpacho-y
  10:28am
BSI:

Cecile: nevermind!
Quick google image search & I know that Grace stuff! The skinny bottle, etc... If memory serves, I've had my share of the stuff...

EGAD, hungry for some reason.
  10:28am
Cecile:

Grace is a Jamaican hot sauce like Tabasco. But SOOOO flavorful. We got some 3 wks ago and have 1/2 of a 6 oz bottle gone.

ITA with Priscilla. Also I think it's too oily for the squash.

DCP: if you can find Grace, I think you'd lilke it.
  10:29am

Carmichael:

Good morning, Trouble and modern listeners.

Cholula sauce is wonderful. So is any chili garlic sauce.

Scott is right. Cook the dickens out of your meat and you're OK.
No avocado.
Odessa is the best box set I've ever purchased.
I had both knees repaired at different times, one arthro'ed and one laid open. I still run 10k races, but it's because I'm an eejit.
It's Johnny Ramone's birthday.
  10:36am
Cecile:

I ordered mine from Amigo Foods in Miami. Ok prices and great service. I also got my favorite mango chutney, Matouk's there. (had to round out a minimum order)
  10:37am
GP:

Good morning Trouble and everyone.
Thanks Annie for the hot-sauce tip..always on the lookout for more fire.
  10:38am
Carmichael:

Yes, Grace is on my list now. And Matouk's is the ONLY mango chutney! Just had it on Saturday, slathered all over my homemade somozas.
  10:40am
Cecile:

I keep forgetting how much I like it. I should have ordered like 5 bottles.
  10:41am
doug from DC:

Good for you, Carmichael. I had hernia surgery last year and still run 5K two or three times a week. I'm an ijit too.

  10:44am

And for hot sauce, I like to buy canned chipotle peppers in adobo sauce and use the sauce for enchiladas, etc.
  10:45am
GP:

mmmmm Pierogis....Helped to have a Czech grandma.
  10:45am
dc pat:

doug: I use those in marinades but they can be REALLY hot. 2 or 3 plus a little sauce will do it...
  10:45am
Cecile:

YAYAYAYAYAY
I must find some

chiles in adobo are great.too
  10:45am
annie:

i love hot sauce, vinegar-free is hard to find, but i'm gonna try to make my own, now that i've stocked up on spices..
  10:45am
Chris:

Wow national pierogi day? Didn't know that. I miss my sainted grandmother's homemade pierogi, still the best I've ever had or will have. Never been able to get kielbasi anywhere near as good as what she used to buy either.
  10:46am
dc pat:

I recently found some ground chipotle powder and put that on EVERYthing...
  10:46am
Carmichael:

Doug, I make crock pot chicken tacos with chipotle/adobo. Super hot and tasty.
  10:47am

Yes! I use Penzey's! Tis wonderful
  10:48am

Recalling one of the best hot sauce names I'd heard -- Slap My Ass and Call me Sally -- and when I just looked it up, found a collection with a bunch (an ass-load) of...umm, irreverent, impolite, caution-and-clench-inducing monikers. How many stars of brash d'ya like?
http://www.hotsauceworld.com/hotsauces.html
  10:48am

hmmmm. Carm, how do you do the chicken? You cook it before, or in the sauce?
  10:48am
BSI:

This tune is plunging my thursday morning brain into a crock-pot of rainbow tacos and carpets of hot-sauce freakybeeps. Nice.
  10:49am
north guinea hills:

I got some excellent Nigerian chili powder from one of the West African markets in Harlem...., easy to mix w/ many things....
  10:49am
GP:

Cecile,
There is a Penzey's store near my office. I love just going in there and being thankful for my nose.
  10:49am
annie:

now i want to go out and find a mexican restaurant.. hmmm.. yumm.
  10:50am
north guinea hills:

Although for extreme heat w/ decent flavor, Blaire's hot sauce is my favorite. Dave's is just heat w/ no real flavor.....
  10:50am
Carmichael:

I put thighs right in the crockpot, along with the sauce and 2 or 3 peppers. A dash of granulated garlic if you wish, and put it on low until I get home from work. The house smells great, too ...
  10:51am
trs:

creuset (or clone) or crock pot (or clone) ??
You can put the first one in the oven or on the stove. Or can you do the same w/ the liner of the crock pot? Eyes on one of the two.
  10:51am
doug from DC:

Yes, I need to get a crockpot. My neighborhood has a large Ethiopean population. Have you tried berbere powder?
  10:52am
dc pat:

this cheval fou thing is workin for me
  10:52am
Carmichael:

Hmmm, no. Tell me more!
  10:53am
Trap:

I was thinking about getting a 'crock pot' but I want it to look like the one my mother had in the 70's. Wanted to use it for brisket? Only because I have this marinade, left over from the AMAZING 'smokra' from Rick's Picks pickles (from NY).
  10:54am
fishmonkeystew:

I ate at an Ethiopian restaurant in Seattle once a few years ago. Amazing food. Good good good!
  10:55am
annie:

now that the woodstove is partially fired up i can use the oven part to cook something all day. today i'll get it really hot and try to make rye crackers.. ahh. ethiopian food; i always think of the red sea..
  10:55am
Cecile:

then you shred the meat into the sauce.

trs - it's completely up to you. I wouldn't put a liner into the stove with the ones I have, although there are some you can. Creuset is great, but it's too heavy for my wrists - so I go with a crock pot many times or use a thinner pan.

AND you can still get great ones at thrift stores, Trap. I still have the two I got for my wedding 28+ years ago.
  10:55am
north guinea hills:

yeah, dc pat, this cheval fou is phonomenal!
  10:55am
Chris:

God, I'm starving now.
  10:56am
Cecile:

I love the raw kitfo, but haven't eaten it in a while.
  10:56am
north guinea hills:

I need to go out and get some food after cheval fou.....
  10:57am
trs:

oh, i guess a creuset is the same thing as a dutch oven. Dutch? French? Shows you what I know.
  10:57am
dc pat:

yeah, DC is packed full of good Ethiopian food, thank gods...
  10:57am
BSI:

chris: no kidding.
& I was planning to sacrifice lunch today to go spelunking at yonder record store..... may have to re-think everything now.
  10:57am
annie:

wow!!!! great gift for the recycling newlyweds!!! gift certificates to flea markets!!!
  10:58am
trouble:

this is a fabulous hot sauce resource! i can add my secret weapon is pimenton: a spanish smoked paprika that you can find stateside now. it comes in hot and sweet ( which is still hot) and they are so deep and tasty. I just added some to a split pea soup i made yesterday in the crack pot.
  10:58am
Cecile:

The Le Creuset is enameled cast iron.
You can get Lodge pre-seasoned cast iron, it's cheaper and if you clean it right, it is non-stick.
  10:59am
Cecile:

Trouble, that sounds scrumptious.
  10:59am
doug from DC:

Berbere (pron. bear-bear) is a cross between chili powder and curry powder. It is dark red, from the chilis, but also contains ginger, corriander, allspice, etc., and something called ajwain, which tastes like thyme. It is ferociously hot and deliciously spicy.
  10:59am
Carmichael:

Cecile: I leave the thighs whole until ready to eat, and shred them in the sauce. I use thighs because the meat's a little sturdier than breast meat, and a little greasier, which helps the sauce (I think).

Doug: Try to get an oval crockpot, as opposed to the little round ones. You can do so much more with them, like cook a rack of ribs, or a sizable pot roast, etc ....
  10:59am
Jennique:

Oh la la la. Il fait chaud dans mon office.
  11:01am
BSI:

Doug:
Jeezus effing CRISCO that sounds marvelous. You're in the 'hood now, so where do you find this marvelous bear-bear?
  11:03am
Cecile:

I did get an oval one, so now I have three...:/
  11:03am
trs:

I think I'll go with the option that allows stove and oven. Flexibility in range gets me every time.
  11:03am
dc pat:

Carm: yer makin' me want to eat dead chicken parts
  11:04am
Cecile:

Carm, one last question bone-in or boneless? Or whatever's on sale?
  11:04am
dc pat:

actually, if I ate meat, I'd do Carm's thing with turkey.
  11:04am
chris:

Holy Tortoise!
  11:04am
Carmichael:

Berbere it is! Thanks Doug.

I have a set of old Le Creuset (the brown enamel), and while they are excellent at evenness of heat and are very sturdy, decades of use have beat the crap out of them. And they are a bit hard to clean. I still use them to make stews or soups, but I do everything else with Calphalon pans.
  11:05am
dc pat:

I cook everything in iron skillets. They rule and you NEVER have to replace them.
  11:06am
Carmichael:

I normally get boneless thighs (from Whole Foods down the street), but I suppose bone-in may be just as good.
  11:06am
doug from DC:

There may be some at Mom's on 14th just south of Buchanan. That's my fave tiny grocery. They have all of these signs about values, honesty and character, I think to deter holdups, but they might also be affiliated with the Ethiopean Orthodox church around the corner. But there are plenty of Ethiopean markets around 14th and Buchanan and in Adams Morgan, too.
  11:07am
Carmichael:

YMA!!!!! Thanks, Trouble!
  11:09am
Cecile:

they have the boneless on sale a lot.
my husband doesn't like them plain, but in chili or other things that disquise the look/flavor he's fine.

Great, a new recipe!
  11:11am
trs:

hard to clean - bleah. Reading on a 'vs' google search that the old ones weren't enameled. I don'know.
  11:14am
Cecile:

I know, Trouble.
*pours good Cabernet into the gutter in honor of dead homie*
  11:15am
dc pat:

I wonder if the Gourmet recipe archives will exist online in the future.
  11:16am
Cecile:

probably
epicurious has loads of their old recipes.
  11:17am
laurabella:

is there really a soundway comp panama 3 trouble? i thought they were only up to #2 ??
  11:18am
BSI:

re: the death of Gourmet mag., it was inevitable. Conde Nast bought up several titles which were totally redundant vs. their existing stuff; Gourmet and Bon Apetit were destined for a cage-match in the conference-room of death. Two go in, only one comes out...
  11:18am
doug from DC:

Yeah, being in a publishing group that does a lot of magazines, this is a tough time for the industry. Read more magazines, everyone! Sure you can read articles on the internet, but it will never be the same as having bookcase shelves of back issues of The Wire.

Her voice sounds like a weak version of J. Foster

GP:

How about "Cook's Illustrated" Anyone here like that one or their "America's Test Kitchen" T.V. show?

I used to really look forward to Christopher Kimbles editorials in every issue...rarely about cooking but a lot about life.

annie:

  11:24am
Sweetchef:

BSI:

Doug is right, although in my scene (controlled-circ. trade magazines) it ain't about readers as much as it is about advertisers. So buy some 12x contracts, y'all! Keep your local BSI commenter in veggieburgers & chili-garlic sauce for another year!
  11:27am
annie:

just bookmarked la cucina italian. the photos are to die for

doug from DC:

Just read that DC has the country's largest population of Ethiopean-Americans (between 150,000 and 200,000). And the guy who invented the Bowflex machine was Ethiopean. The things you can find on Wikipedia.

Hi Trouble

Great visit, too short, back to Muumiland today! see ya
  11:34am
dc pat:

  11:35am
Dominick:

  11:35am

  11:37am

  11:37am
doug from DC:

Yes, that was a fantastic show. I need to hit up the local rekkid shops for some of his other albums.
  11:37am
GP:

Dominick,
She is everywhere!
  11:38am
Ike:

I never get a chance to try D.C.'s excellent Ethiopian restaurants anymore. I never visit D.C. without area relatives -- who dislike African food (but they do like spicy Asian food, to their credit). NY's Ethiopian places are just not quite as good.
  11:38am
Baba:

Why does this music make me salivate? And now my stomach's grumbling ...
  11:39am
Cecile:

I don't even read the mags anymore.
I find the best recipes of late from Indian home cooks who post their curries on the 'net. They're cheap, easy and delicious.
  11:42am
Baba:

Sounds like the perfect date.
  11:43am
Cecile:

  11:49am
Chris:

Yes, Abol is incredible. Worth a stop before a Pyrmid show, Doug.
  11:49am
Ike:

There's a lot of interesting restaurants around there. I've been to Mandalay (Burmese) in S.S. a couple of times.
  11:49am
Chris:

Ack. Pyramid.
  11:49am
GP:

Emmanuelle Seigner can sing me to sleep anytime..did I just say that out loud?
  11:49am
BSI:

I'll heartily second Doug's suggestion.
That place kicks superior foodie arse.
Approved & endorsed!
  11:52am
Carmichael:

Thanks, Trouble!! I think we're all headed off to a hearty and spicy lunch!
  11:54am
doug from DC:

Annie, Silver Spring has completely changed. If you haven't been there in a few years, you likely won't recognize it. A lot of it is kind of mall-ish now, but there are some good restaurants, and of course the American Film Institute's AFI Silver Theater. Also Pyramid Atlantic Arts Center, where Sonic Circuits-related events continue throughout the year.
  11:54am
Cecile:

I know I am!
  11:55am
trs:

Great food + music. Warming curried squash yam onion garlic potato carrot soup with some avocado'd toast on the side..happy lunch.
  11:55am
Baba:
