Annie, I suggest dhokla: Soak the dal overnight in water, then drain. Place in a blender with some fresh ginger, salt and asafetida if you have it. Put in just enough yogurt so that when you pure the soaked dal, you have a pourable batter -- not too thick, not too thin. Pour into a bowl, then stir in a teaspoon of baking soda. Now pour it into a greased baking dish -- one that is small enough to fit in a steamer, and steam the dohkla until it sets and is firm to the touch. (Should be a little fluffy like bread.) Take out of steamer and let cool. Fry spices -- black mustard seed, asafetida, curry leaves -- in some oil, then pour over the dhokla.

OK, one more cooking tip on the dhokla, and then I'll quit crowding the message board with gastronomic discourse: Indian recipes recommend that you use this Indian antacid called Eno (which would be in place of the baking soda), and they specify that when you stir it in, you should only stir in one direction.
