it's a pretty fun job, i sell fresh roasted nuts..they're not organic, but the owner has a nice set-up and uses no oils at all. so, it's a job. ..and i love the open farmers market style of selling, and i can schmooze.. hehe

Brian, I have not tried to make my own cheese. well, last month I did pitch in making cheddar with the cheesemakers here at work. That was HARD WORK. Cheddaring is probably the most labor-intensive cheesemaking process. Oy vey!

Parq: No sir, we make nearly all our block cheddars here in the Brattleboro plant, where I'm at. Up in Grafton they make some block cheddars, but those vats are mostly used for our new cave-aged line, since we put the caves up in Grafton.
Oh, and these are cheese caves, not caves where bears and bats live, people! :-D

Parq: Cave-aged means the cheese was aged in a room with a temp and humidity specific to the type of cheese it is. If a cheesemaker is making different types of cheese -- washed-rind, soft-ripened, natural rind or clothbound, blue -- there will be different caves for each type because they require different environments, and each has specific molds and bacteria that shouldn't be introduced to the other cheeses. Dig?

Brian, no. Roquefort is aged in an actual limestone cave. And there's some Emmentaler and Gruyere that's being aged in the Kaltbach caves, but usually a "cave" is just a temp/humidity-controlled room. There are a few cheesemakers who build or maintain stone caves, but keep in mind: any indigenous molds, yeasts and bacteria will jump right on the cheese.

Monica: Ashing the rind is an old French trick -- you'll see it on some smaller goat cheeses, but usually ones that aren't meant to be cut. It's not supposed to add to the flavor at all. I don't think the Beekman Boys gave much thought to cheesemongers when they made their cheese. I have no idea what they were thinking, but I'm confident it wasn't anything really cheese-related.

There is one known recording of Charlie at age four or so singing as "Cowboy Charlie" with the Old Haden Family Show. The track is included on Haden's "Rambling Boy."
