Up in Grafton they make some block cheddars, but those vats are mostly used for our new cave-aged line, since we put the caves up in Grafton. Holly in NC: Hi! I don't know Harbison. I'll have to look it up. Monica: Ashing the rind is an old French trick -- you'll see it on some smaller goat cheeses, but usually ones that aren't meant to be cut. It's not supposed to add to the flavor at all. I don't think the Beekman Boys gave much thought to cheesemongers when they made their cheese. I have no idea what they were thinking, but I'm confident it wasn't anything really cheese-related. | |
