Kat, ha, the glorious fourth salad ritual. I made macaroni salad for something going on tonight.

I always like getting it done the day before so all the seasoning can really be soaked up by the potatoes.

exactly. You have to let them sit, and then adjust the seasoning cause the cold takes away some of the spice.

Unless a brand new recipe I'm trying, I eyeball amounts and improvise with whatever's on hand. But basic ingredients include: About 5 lbs. cubed cooked red potatoes (w/skins), chopped celery and onion (green from the garden today, but otherwise might use red or vidalia), fresh parsley (but dried if fresh unavail.) dabs of pickle relish and a couple chopped grilled brats/sausages.

Seasonings/dressing ingredients include curry powder, sea salt, fresh ground pepper and paprika w/ spritz' of vinegar (red wine w/acai pomegranate infusion was on hand), dijon mustard and mayo, all to taste and to create the right consistency. Other ingredients I'd add if avail. are chopped bell pepper (I instead used extra paprika today) and a couple of chopped boiled eggs.
