@Cecile: our local hamburger place has holed donuts with raspberry jelly or chocolate mousse running through them. Dozens of little holes all along the bottom of the donut where they put the jelly in. Only place I've found them in.
I think how you would do it is that you would have a ring of jelly (perhaps enabled by agar or super-cooling) that you would place on a ring of donut dough. Then you would place another ring on top and join them together. Then a quick toss in the fryer, and a bit of cooling...?
@Cecile: oh yeah, and a holed donut filled with caramel sauce is available at the store, but I haven't tried that, so don't know how that's done or how successful they are at centering the sauce along the donut.
