thai food is pretty easy to make vegetarian. The only problem is the fish sauce if you are vegan. I do think they make an analog for it thought.

I invented a killer veg version of fish sauce. It doesn't taste just like it of course but it's a perfect substitute. Involves porcini mushrooms which are pretty fishy.

I've made thai tofu just leaving out the fish sauce, and it is still delicious. most of my better vegetarian dishes are thai influenced. I'm not one for authenticity...deliciousness is #1

3 C. water
4" piece kombu
about 1/4 oz dried porcini mushrooms
2 TB soy sauce

Bring to boil, remove kombu, simmer for a while.
