At least rabbits have meat on them, and the pelts can be saved too. The Joy of Cooking actually shows how to skin a rabbit. I have never done it myself.

I don't think moles have enough meat on them to be worth the preparation trouble. It's a good thing foxes don't need their meals cooked for them. Can barn owls eat moles? They are certainly good at mouse killing.
