It's basically a cake, made with chick pea flour. We use a whole lot of Pamela's GF Pancake mix - which is really good although I don't know what flour replacements it uses.

Hey trouble I have been GF for almost 20 yrs... but I probably made about 2 cakes in that time. Not much of a baker...but that cake sounds good I'll have to try...recipe radio!

here is the recipe! i forgot to mention the maple syrup: CHOCOLATE CAKE MADE WITH CHICKPEAS

15-ounces chickpeas, drained and rinsed
½ teaspoon baking soda
1½ cups dark chocolate, melted
1/2 c maple syrup
3 large eggs

. Preheat t oven t to 350°

Mash the chickpeas (easiest to do in a food processor or Vitamix, but of course, you can do it by hand.) Add baking soda, maple syrup, and eggs. Cool the melted chocolate before you add to the mixture. Pour into a pan or muffin tins.

If you are making a cake with the recipe, bake for 25-30 minutes, or until springy in the middle (just like a "normal" cake)
If you are making cupcakes, you should check them after about 12 minutes.

My beloved old Mac stopped - but it's great comfort some things are consistent, like Trouble in this timeslot for nine more months @ least.

it's starting to emerge that the issue for most (not all) people is not the gluten but the iron enrichment which makes it harder for people to digest gluten and may be the main cause of obesity epidemics in countries that have mandated iron enrichment (not France, for example)

With all the food talk, I have to report I overcame longtime strange fear of failure and damage last night and cooked an eggplant (from friend's garden) for the first - time - EVER. Easy 'n tasty. With all the cake talk, I have to report I watched a Julia Child clip in which she started to make Queen of Sheba chocolate cake, which I really want to eat just because it's called Queen of Sheba cake.

Eggplant: slice, brush with olive oil, season, and grill until charred a bit on surface, soft in middle, then top with shallot/cilantro/parsley/salt/pepper/olive oil/garlic all chopped up and mixed together (and best left in the 'fridge for an hour or so). The best.

Kizzy Hal reminds me of The Changes, and it looks like they have a recent-ish release I didn't know about!

The eggplant was at least as good and worth eating as something like a cooked zucchini. I mighta overcooked it by the standards of anyone with a finer touch, but it was fine and I am flush with triumph for the double achievement of preparing it satisfactorily AND getting to it before it took a mushward turn on the waiting-shelf like other such gifts have in the past.
