I spent 12 hours, that's TWELVE HOURS, on Sunday hand-making panettone. You have to let it rest for four lots of two hours. In the end, it was a disaster. Heavy and not good. Edible, but not in any way like a panettone. But I redeemed myself with ricciarelli yesterday, probably the best patries I've ever made. //end of baking update

@brian:my vinegar mother was years ago and it went bad. urg. i keep meaning to start another. next up is making kefir. that and the sour dough seem to be dependant on a warm space and my house is on the cooler side. no 70-80 degree weather at mi casa

@utopiast - first batch i did 11 re-used GT bottles.. did a few with ginger chunks, some with some mashed up raspberries, a few lemon and 2 plain,.. I definitely did not add enough fruit though.. not enough flavor.. or I didn't allow second/bottle fermentation long enough at room temp.. not sure.

@trouble-with a thermometer in it turn on then turn off your oven for a minute. It should get it up to 80 degrees. That's what my wife does to get dough to rise.
