Kolaches are a sort of sweet yeast roll with fruit jelly filling in the center on top. They are a popular Czech pastry in Texas but I don't know if they are in the Czech Republic. The Texas version may have mutated from the Old World original.

I think I've been to the bakery in West, TX. There was a Kolache Shoppe in the strip mall where I attended driving class in high school in Austin. It made no claims on being a kolache capital. I once made them from a recipe in Saveur magazine, and decided they weren't really anything special, maybe because they went stale quickly.
