Tommy, I've found the real trick roasting whole spices rather than using ground (and always roast them in the pan before anything else). If you can find an indian grocer (there are a ton here in parsippany) they have bulk spices for a good price.

Ceylonese curry: Great starter curry, really easy. Vegans, avert your eyes! Brown ground beef and a couple of chopped onions in a little butter or ghee. Throw in a handful of good-quality curry powder or large spoonful of curry paste. (Extra points if make your own curry powder. Lots of recipes on the web, just remember to roast whole spices in a dry skillet, and pulverize them in a mortar or coffee grinder.) Stir in curry and cook until it smells aromatic. Throw in two cans of stewed tomatoes and a can of beef stock. Simmer for a while, then put in a bag of frozen peas. Simmer until peas are hot, then remove from heat and stir in some plain yogurt. Toast some slivered almonds in oven until golden. Serve curry over rice with almonds sprinkled on top, and mango chutney and other garnishes as desired. If you want you could replace stock with bouillion cube and water. A can coconut milk added with stock is also nice. Enjoy!
