Apparently you can culture Kefir on sugar water instead of dairy product - this is a new thing I am experimenting with, for probiotic reasons.

It's kind of like sourdough bread - once you get the process going, you can keep making more batches from the same culture that you keep in jars in the fridge.

@CarolCrow - it's rather easy, actually - it's mostly down time. You mix warm water, sugar, and the packet of grains to get them started, then set aside for a few days in a warm spot. Then you make a new sugar water mix and put the grains into that, and in another few days you have drinkable kefir. You can also do a secondary ferment with fruit if you want a more bubbly / flavored drink.

Interesting experiment you have going on there Dave. I'm actually going to pick up some kefir water from Shoprite when I go out after the show. I wish I had the time to make stuff like that at home but if I did it'd probably be beer first though
