@NGH: hahaha OK, I have to sheepishly and hypocritically admit I had the first record from '94 or '95 and did enjoy the cloying sweetness of it ("Drum Machine Joy" was on it, I think). Over the years, I occasionally dipped my toe back in the water and checked out later stuff online but just couldn't ever get into it.

I make one particular "fancy" soup that has a really smooth, rich consistency: roasted corn bisque. Lots of cumin and a little cayenne to give it a boost. Finished with cilantro and heavy cream. The New Year's version includes smoked salmon.

oh i'm verrrrry familiar with youtube yoga-er Adriene. my soups on rotation are the ribollita, black lentil soup & the curried coconut red lentil soup from 101cookbooks. check em out. last night we made black bean pumpkin soup and that was also good. soup is the best.

When cooking a dish for the first time, I look up a dozen recipes, and average the ratios in my head (and to my tastes). After about 4-5 times if I master it, I can do it by heart.

Did you ever see those really cool crates that fold up into flat slats? They stack like legos sort of and the banding holds it all together. I wish I could invent something like that and make a million and buy a house in Poland.

Yeah, they're called lift vans and they clip together with wire brackets - only used for warehouse storage tho - but you can stack them to the sky. The problem with building a reusable unit for shipping is that every artwork is a custom job. Otherwise you're paying dearly to ship empty interior space.

Nothing's is written down, but I got the overview from a chef I worked with years ago. He just came up with it one day.

In a large cast-iron skillet or roasting pan, roast corn that's been dressed lightly with olive oil and (ideally, fresh) rosemary. When it's nice and caramelized, dump it in a large pot with stock/water and a few potatoes. Season with lots of cumin and a bit of cayenne. (The pique of the cayenne will diminish when you finish.) Salt to taste. Simmer for a good long while. Puree, and pass through a fine strainer/chinois. Finish with heavy cream, then puree cilantro into a portion that you mix back in.

There's actually a large well-known mental hospital in town and a lot of people who get released from there stick around, then there's the summer camping gutter punk travelers, and then you've got the junkies and the cocaine and even meth now. People sleep down along the train tracks along the river and stab each other.

Burlington might as well be Tribeca for all the New Yorkers. There's lots of nice places in Vermont and New England in general, but you want to stay out of the old mill towns. Basically any town with old brick buildings on the Connecticut River you want to stay away from.

They're not mill towns anymore and unless they are stops on the antiquers highway then most old mill towns in central New England seem to me largely drug-riddled ghost towns. Pittsfield, Worcester, Springfield, Holyoke, Brattleboro. I'm being anectotal and maybe a bit facetious, but I stand by this. My family is still up there.
