@fred: I'm pretty sure he was (there was a dancer there, but I only knew the names of the guys on the Ethiopiques Recs). It was outdoors (WFMU was there), and rainy (out of dozen of outdoor concerts there, only one where it wasn't raining, and it was overcast)

The late, great Huell Howser, a California historical treasure and host of California's Gold, did an episode about LA's Little Ethiopia around Fairfax and Pico, a corner made infamous during the rioting following the Rodney King verdict. I was having lunch in one of the Ethiopian restaurants there one weekend when Howser walked in to scope the joint. Have yet to watch the episode, though.

@chresti according to the recipe in my fermentation book it's just water, flour and maybe salt, left to ferment a day or more. Then cooked on a skillet. I'm putting it off because I have to find teff flour.

melinda yeah the restaurants might use flour -for our "refined" palates!
i used to work for someone who made injera with whole teff (which we sold at his store) and said he saw no point in grinding it, even though he had a stone grinder at home. i never tried his, but he claimed the lack of need to grind it, along with a fast cooking time, were the reasons teff became popular in ethiopia in the first place.

I can barely manage cooking Indian cuisine, I need to master that first before moving on to Ethiopian.

I outdid my parents in spice dept by the time I was 6 (the first time I tried Tobasco). When I met my wife (en Mexico) her friendsds were amazed I'd eat a serrano chili, and then down a big shot of mezcal (my wife still complains I make my food too spicy).

@coel: considering my tolerance is up to rubbing my eyes after cutting ghost peppers, w/o flinching, you might be on to something (this extreme tolerance is rather recent, I have more chilis then I know what to do w/).

Teff is a grass, but it can be cooked like a cereal. It tastes like polenta, (to me), rich in iron and protein. Very easy to cook@doc
