y'all should visit Buenos Aires sometime for pastry heaven. Best of all, a lot of the pastry names come from the anarchist bakers many of whom arrived here from Italy at the turn of the last century: for example, the generic name for "pastry" is "factura", or "bill," to remind the buyer (and the boss) of the labor that went into its creation

Yesterday my beloved and I walked down Jersey Ave and stopped at a small cafe. I thought of my childhood in Jersey City. Sunday pasta on 7th St.
On occasion there would follow a white box from Monteleone's Bakery. Within were held the sweetest edible delights. Nothing since has ever compared.

As well it’s cousin the lobster tail is stuffed with...Canolli cream
When you make canolli cream at home the proper ricotta is Ricotta impastata with sugar,cinnamon oil,heavy cream and vanilla. We never made it with rum flavor but 30% of bakers do. So it’s ok if you do
As far as my favorite Pastry I would go with a specialty not known to many non Italians
The booby cake aka St.agathas.

@Melinda yes. Dedicated to St.Agatha. It represents basically abused women. Kind of an odd homage. Several different stories to her legend. She was taped by possibly Roman Guard who cut her breasts off. The pasty is marzipan sponge cake Canolli cream white fondant and a candied cherry. Shaped like a small breast. More popular by Sicilians. We used to get them at DeRobertis in Manhattan who unfortunately went out of business.
The pastry has many names. Yet everyone will k ow what you mean if you ask for booby cakes
