@WoodsOfNH I got to trying the Rudy's organic ones but they get moldy in like two days. The $2 Old Fashioned Hearth brand is pretty decent, but the Bays English Muffins are the best, especially sourdough. They require refrigeration though.

But since lockdown I've just been baking this recipe from King Arthur called English Muffin Toasting Bread. Does not resemble english muffins in any way but it makes a very good multipurpose loaf of bread

Funny that English Muffins became the topic. I was passing through Beacon NY yesterday morning, after some much needed camping in the woods. Passed by a place called The Beacon Daily which had breakfast sandwiches on their house-made English Muffins. My girlfriend got one and it was fantastic. Being a Jersey boy at heart I got a Porkroll, Egg & Cheese on a Kaiser roll with a bit of hot sauce which was pretty damn great as well...

@handy you have to get those loose tofu blocks, the ones shaped like pillows in a bin of water at the store. Slice one in half width-wise and fry it with some salt and pepper. Get volcanic/sulfuric salt for a more authentic taste. That's your egg! Store bought sausage is fine, but you can DIY it with a gluten based recipe. Toast the muffin first, add some sriracha if that's your thing
