	4:36pm Dean: I just picked up a collaboration brew by Breakside in Portland, OR, and Rare Barrel, down the road a bit here in Berkeley. It's a lager brewed with jasmine, ordinarily not my thing, but I like Breakside and RB does very nice sours.

I think the number of tabacs decreased some, but there are still plenty. More and more Chinese owned (I talked with two separate owners who told me these are a popular investment there)

	5:20pm Stanley: Both is good. Try first neat then a drop of water. A lot of what I get is cask strength averaging 58° proof) so it needs a wee spalsh.

	🚂 5:28pm Bas NL: @Stanley Yes it was! I understand him craving the taste! ;) And yes, the Càrn Mòr is just 2 cask/800 bottles. I got a good source for nice whisky's..
	5:28pm fred: @Stanley: Cask strength is the way to go for me. I usually don't add water (and definitely not ice, ever). Casks that can be bottled straight are the best ones (still filtered, the unfiltered kind is rare, at least over here)
	5:30pm Dean: I get a kick out Peter Warlock's remark that V-W's work is "a little too much like a cow looking over a gate," but it's a bad rap. Elgar, V-W, Delius, Bax, Finzi, the so-called pastoral composers, could be really inventive and interesting.
	🚂 5:33pm Brian in UK: Dean, a bit like Impressionists painters being called chocolate box artists. Nothing wrong with atmospheric painting or music for me. Alfred Sisley rules.
	5:33pm TDK60: Dean, and I even hear V. Williams had the blues some too.
	5:33pm Stanley: Unless you belong to a society, like I do, it's difficult and expensive to find single cask bottlings. However, many distilleries have them and often with exotic cask finishes but only for sale if you visit. Worth a trip to Scotland for that.

	🚂 5:39pm Bas NL: There's one tasting couple of times a year i visit a lot where the organizer imports directly from the distilleries. He's even got his own reserved casks. But you are right, i'll have to visit Scotland badly.
	5:40pm fred: @Stanley: I'm not fond of exotic cask finishes. My tastes run to the basics (and peat). I can no longer afford the great stuff all that often, and I'm not part of any society, but having had better days and being a long time customer of a shop in Paris I had the occasional chance to get a sip of the samples they brought back when selecting casks for their own bottling. Spectacular

	5:42pm Stanley: Bas - I tried to drum up support to club together and make a resevation on a cask a few years ago but unfortunately it was a hard sell, especially to my older friends, who thought the wait might outlast them.

	5:45pm fred: I got the ECM Art Ensemble of Chicago box set a few years ago, great stuff in there

	🚂 5:45pm Bas NL: On our tastings we've had examples of casks that had gone bad.. it happens. You are NOT happy if your one cask goes bad!
	5:46pm Dean: It has been a long time since I've had a good single malt. I should nose around the specialty shops here. Used to shop at a store in Manhattan Beach in SoCal. One day I strolled in as they were opening a Macallan 25! Samples for all.

	🚂 5:49pm Bas NL: @Brian.. Temperature is very important. I've tasted a 4 year old Amrut from India.. tasted like a full 18 year old Scotch. It's the heat.

	5:51pm Stanley: Brian - I thought cool, Scottish type weather was of paramount importance. That view was also taken by the Japenese master Masataka Taketsuru, when he set up his distilleries in Hokkaido, Japan's coldest region. Then I learnt about malt whisky being produced in Goa, India and was reliably informed on these boards, no less, that warmer weather accelerates the ageing process.
	5:52pm Stanley: I refer to Bas's experience above.
	5:52pm Dean: Drinking also accelerates the aging process.
	🚂 5:53pm Bas NL: I'm sure that's it @fred! But in general there are very good whiskies emerging from Asia. They've found a taste for it and are getting GOOD in production.

	5:28pm fred: @Stanley: Cask strength is the way to go for me. I usually don't add water (and definitely not ice, ever). Casks that can be bottled straight are the best ones (still filtered, the unfiltered kind is rare, at least over here)
	5:30pm Dean: I get a kick out Peter Warlock's remark that V-W's work is "a little too much like a cow looking over a gate," but it's a bad rap. Elgar, V-W, Delius, Bax, Finzi, the so-called pastoral composers, could be really inventive and interesting.

	5:33pm Stanley: Unless you belong to a society, like I do, it's difficult and expensive to find single cask bottlings. However, many distilleries have them and often with exotic cask finishes but only for sale if you visit. Worth a trip to Scotland for that.

	🚂 5:39pm Bas NL: There's one tasting couple of times a year i visit a lot where the organizer imports directly from the distilleries. He's even got his own reserved casks. But you are right, i'll have to visit Scotland badly.

I can no longer afford the great stuff all that often, and I'm not part of any society, but having had better days and being a long time customer of a shop in Paris I had the occasional chance to get a sip of the samples they brought back when selecting casks for their own bottling. Spectacular

	5:51pm Stanley: Brian - I thought cool, Scottish type weather was of paramount importance. That view was also taken by the Japenese master Masataka Taketsuru, when he set up his distilleries in Hokkaido, Japan's coldest region. Then I learnt about malt whisky being produced in Goa, India and was reliably informed on these boards, no less, that warmer weather accelerates the ageing process.

	5:52pm Dean: Drinking also accelerates the aging process.
	🚂 5:53pm Bas NL: I'm sure that's it @fred! But in general there are very good whiskies emerging from Asia. They've found a taste for it and are getting GOOD in production.
