Quinas/Quinquinas/Kinas/Chinatos use quinine for bitterness. This was the CBD of it's day and was thought to cure almost everything.
Americanos used gentiane (root or flower) to provide bitterness.
We sell all these categories today and they are very popular with the craft cocktail bars.
Many of the other botanicals such as cocoa not longer exist due to style/taste preferences or legality.

infinite THANKS for all the Toots music, my heart hurts so much from his loss -- i agree, SO much music, so little time!
and i guessed right -- i had a feeling you knew him when you were growing up :)
and thanks, especially, for "Sweet and Dandy" -- that scene in "The Harder They Come" one of the best in film history, imho

only got to see Toots and The Maytals once -- years ago,
one of those free outdoor Summer shows -- on the west side of Manhattan near the Hudson River -- on a bill with Tabou Combo, i think? -- INCREDIBLE, unforgettable show!

as much as i love the Summerstage shows in Central Park, Prospect Park is freaking GORGEOUS! love the vibe there -- did you go to any of the African Festivals that used to be a yearly event?
saw so many incredible shows there -- Kassav', Lila Downs, Angélique Kidjo . . . and STILL kicking myself for missing Isaac Hayes when he opened the season one year!
i loved the shows in the smaller NYC parks (Summerstage or not) too! Plena Libre at St. Mary's Park in the Bronx, Gil Scott-Heron and The Last Poets both did shows at Marcus Garvey Park, Antibalas at Fort Greene Park . . . DAMN, i am so hoping that someday things will be sort of "normal" and we all can experience stuff like this again!
