	9:20am Buddha of Suburbia: This playlist is WONDERFUL! I went to Spain in my early 20s and in a small village called Malaga, I saw all these Flamenco dance students walking around. They put on a show at the local bar...the guitarists looked unkempt and shady...but it was delightful. The girls danced with so much grace and passion. Thank you for transporting me back there....

	9:34am Reno D: As a novice, I’ve been using an instant read thermometer. The insulated Chambers oven wasn’t warm enough with just the pilot flame. The Thermowell compartment is too hot (150°), but the surface pilot, using an enameled cast iron pot with a lid, wrapped in a few layers of tea towels does the trick.

	♥ 9:41am WoodsOfNH (now Maine): @melida I got into it because I'd discovered this guy named Sandor Katz. So no, the first try worked for me. Just shredded the cabbage, massaged with a bunch of salt, added it (along with some garlic cloves) to a large glass jar. Then (this was a trick I got from Alton Brown), I placed a large ziplock bag on top of the kraut and filled it with water. This forced the kraut down under it's own juices. Then just put a tea towel over the thing and put it in the pantry. Can't remember how long I had it in there before trying it. Two weeks maybe? A month? But it was really tasty.
	♥ 9:41am YETI BOB: @melinda: It can definitely go "off". I had to throw away the first batch of hot sauce because the wrong kind of microbes got in there. Helps to check in and smell it every day. It's really not too hard, don't get discouraged! @Woods: I grew chili peppers this summer and my plants were really productive, so I've been coming up with all kinds of things to do with them. Peach-habanero jam was divine.

	♥ 9:44am Vivian: Good Morning folks. Enjoying this conversation about fermenting, hot sauce and such. As I type, drying some peppers. Think they're five spice, a new plant in the garden this year. Love the shape of the peppers, couldn't resist.

Keeping the fermenting cabbage (or peppers) submerged will prevent a lot of problems. @BopMonroe: I've gotten some great recipes and info from this website (no affiliation) www.chilipeppermadness.com . I just made the Caribbean mango-habanero sauce (with allspice), it's fantastic. And Xni-Pec will change your life!

	9:34am Reno D: As a novice, I’ve been using an instant read thermometer. The insulated Chambers oven wasn’t warm enough with just the pilot flame. The Thermowell compartment is too hot (150°), but the surface pilot, using an enameled cast iron pot with a lid, wrapped in a few layers of tea towels does the trick.

	♥ 9:41am WoodsOfNH (now Maine): @melida I got into it because I'd discovered this guy named Sandor Katz. So no, the first try worked for me. Just shredded the cabbage, massaged with a bunch of salt, added it (along with some garlic cloves) to a large glass jar. Then (this was a trick I got from Alton Brown), I placed a large ziplock bag on top of the kraut and filled it with water. This forced the kraut down under it's own juices. Then just put a tea towel over the thing and put it in the pantry. Can't remember how long I had it in there before trying it. Two weeks maybe? A month? But it was really tasty.
	♥ 9:41am YETI BOB: @melinda: It can definitely go "off". I had to throw away the first batch of hot sauce because the wrong kind of microbes got in there. Helps to check in and smell it every day. It's really not too hard, don't get discouraged! @Woods: I grew chili peppers this summer and my plants were really productive, so I've been coming up with all kinds of things to do with them. Peach-habanero jam was divine.

Keeping the fermenting cabbage (or peppers) submerged will prevent a lot of problems. @BopMonroe: I've gotten some great recipes and info from this website (no affiliation) www.chilipeppermadness.com . I just made the Caribbean mango-habanero sauce (with allspice), it's fantastic. And Xni-Pec will change your life!
