I have been vegetarian since around ‘93. Vegan for about the first 16 years then gave in to occasional cheese. The analogues are much better now, so I really don’t have an excuse except for two words: piz za.

The reason we tell everyone—or that I used to—was because the meaning was unclear back then. So asking a waitress if the minestrone is vegetarian and getting the answer after she asked the chef: “Yes, purely vegetarian: made with chicken stock but no chicken in it at all!” It used to require a lot of effort trying to explain things. Even family members: “We made this special for you, no animal products at all.” But there’s mayonnaise...

Explaining the concept in detail was usually the result of trying to educate people about what it meant, not to infer any sense of superiority. Nowadays no further details are necessary.
