I'm not sure: there were suddenly a _lot_ of Poles (well, Polish Russians back then) and other Central European people in the U.S. back then, and they weren't working 100% of their waking hours, even though Carnegie and Mellon et al probably would've wanted them to be so; there were a lot of Czechs in Texas. They weren't all dancing the waltz.
It's entirely possible there was a lot of polka around but the whitest people didn't know about it until some break-out event, just as the vary gay and black disco scene was huge in N.Y. and San Francisco for years but it took "Saturday Night Fever" for most of America to know [a somewhat bastardised version of ]it.

There was a significant effort by Germans to settle in Texas in the early-mid 1800s. That might explain the similarities between polka and mariachi music...

Is cannabis legal in your state? Many a woman (and man) has found their resistance to accordioning reduced by what I gather The Kids call 'The Natural Mister', 'Roofer', and (of course) 'Muggles of Med Mock'.
