We're publishing a book at work that's a history of milk as product and beverage and the marketing and money that basically created the idea that unfermented milk was some sort of superfood when for centuries, dairy-using cultures pretty much only ate fermented milk (cheese, yoghurt, etc.) at any kind of scale. FWIW.

PS: I love the sheep albums.

Handy so it mentions the bullshit (in many applications) that is pasteurization; does it mention the homogenization process rendering cow milk nearly toxic because of its low bioavailability? or the rampant infection of the cows, creating mastitis that provides an abundance of pus in the cow milk products most americans consume? or the high levels of tetracycline and other antibiotics which end up wiping out the beneficial intestinal flora of those that consume it?
or the powerful milk lobby that's lied from the get-go, brainwashing people into thinking we need that much calcium and protein and that calcium makes bones stronger?
...it probably does.

i think in most nations farm animals are treated -not nicely necessarily, but at least with respect. so the quality of the products created from them is infinitely better.
i only eat kerrygold butter for that reason.
there are exceptions here of course.

Tamar, when you played Ols a few months back, I ordered the CD from Poland. Because of a misdelivered bill that I accidentally opened, I had to write a note to my Polish neighbors upstairs, and I thought I'd give them the cool stamps that had arrived from Poland as an "I'm sorry" for opening their mail. The middle child came downstairs a little while later to give the stamps back and say they didn't need them but also to give my a paczki! So a kind of confusing win-win!

Anyway: I like Ols!
