We aren't vegan here, but we try to eat plant based often. Hummus is king! Just made a fresh batch before the show. It's cool you can make something so healthy that comes from the cupboard mostly.

Hummus is good on bagels too. I like to make it really thick so it spreads good on that. I don't like the store bought kind as much because it has preservatives and stuff in it, meant for dainty dipping. We like eating a lot at once.

It's super easy to make. Jars of tahini usually have recipes. Here is what you need.
Lemon juice, salt, garbanzo beans, garlic, tahini. Then water. I use hardly any water though. then mix it in a food processor.
I haven't tried it on falafel and I had that last night. would of been the perfect opportunity. We had the falalfel with mashed potatoes and sauteed spinach.

I was vegetarian for a year... Went on a tour that took us into the deep South of the U.S. Pulled up to one take-out & looked at the salads on the take-out drive thru & every one of them had meat on it. *Every* one. Didn't fall on that one, but eventually those of us who were vegetarian relented when the vote was going towards stopping for real southern BBQ. Sorry if this is terrible to share. I still think about vegetarianism/veganism often, yet am sorry to report it is not something I have taken to yet...

I think in the Middle East, hummus is not industrially produced. At least not before it started being produced in the west industrially. So the best way to go about it is really cooking your own using chickpeas. The best results do come that way.

I think vegetarianism is difficult to achieve in North America compared to Europe (Western Europe at least). I used to live in Canada and could no longer be a vegetarian because of limitations in options available.

It's super expensive here if you're looking at grocery store ready-packaged healthy options, for sure. If you are committed & willing to do all the work yourself, it can work. But if you want a couple of vegan patties, grocery stores have no problem charging you $10 for that. Two frozen plant-based patties, $10. Easily.

Here in EU (Western EU and Nordic countries), it is easier as vegan/vegetarian food is accessible at decent price. But then again we're facing crazy inflation right now so everything is expensive

Oh, there's definitely ways to make it work Mr. Oxford. Buying in bulk helps, for sure. To be fair, if I truly made the effort, I'm sure I could be vegan. It's likely more to do with personal choices, in the end... But I will say, as you have already noted, that things are set up here to favour a non-veg/vegan diet.

A lot of people say vegan when they mean vegetarian. Or usually not even vegetarian but lacto-ovo vegetarian. (Which isn't actually vegetarian). I took a class in it. It was a long time ago and religion based. but it was right on with their information.

Also, I think it is about culture too. I live close to Nordic Countries and vegan/vegetarian diets are promoted as healthier and climate friendly. People are consciously trying to change their diets because of that. The more they see people do that, they want to do it too. But in the European country where I live in for example, the culture still places value on meat based food. So a cultural element also plays a role.

VEgan wasn't even covered in our vegetarian class. I think the word was mostly in use later. But it's basically a true vegetarian with politics added. For example. Not doing business with people who use animal products. Not allowing people to enter your business if they are wearing fur, feathers, leather, bone.

Thanks for asking, Fab, yes! If anything, I'm just a little behind her, but feeling great now. It's usually later on in the evening or night that things feel less great. But today seems the best day in a while. Still weird that she was pos.+ and I was -neg. but we both got sick. Regardless, we kept to ourselves for a week & are both feeling on track again now.

I am the same way Kittimu. We used to have over 40 chickens and the anglers club used to get feathers for their fly tying. No chickens were harmed. Just chased.
Obviously animals die when leather is harvested, but I don't get political with it. I don't have much of it and when it's used especially, not a big deal to me. I'd wear human leather too though.
