I have breakfast tacos at least twice a week (of course, w/ a soft corn tortilla), usually w/ vegan chorizo, onions, jalapenos, huevos, and sometimes refried beans (+more).

My favorite huitlacoche dish is a huitlacoche potato soup w/ jalapenos and other herbs and spices. It's a great cold weather meal.
