Nothing very special for dinner tonight....leftover spaghetti made with fresh tomatoes, basil, lots of garlic and onions, great quality ground beef (of course!) a generous splash of olive oil and hearty red wine! We're adding some fresh mushrooms that have been sauteed in olive oil and some olives.

Still full from lunch from my kickass local butcher shop : Garlic Ramen w. Pork Jowl, Soft Cooked Egg, Maitake Mushrooms, Garlic Chips and Black Garlic Oil. I'll be paying for eating the noodles later, but so worth it!

Dinner will likely be eggs or sardines or clam chowder.

I can boil a couple bundles of soba and they last a few days in the fridge...I just cut up some fresh cuke, scallions...carrots...whatever...toss it with the sauce for a quick cold snack. It all started when I found sesame paste that wasn't tahini.

For years, the only chicken emporium w/in walking distance was Crown Fried Chicken (ghetto KFC, and greasier). Luckily, a restaurant/bar just open up around the block that does non-greasy fried chicken and awesome biscuits. Best I've had since I've left the homeland.

And now the wiki-explanation: Changüí is a style of Cuban music which originated in the early 19th century in the eastern region of Guantánamo Province, specifically Baracoa. It arose in the sugar cane refineries and in the rural communities populated by slaves. Changui combines the structure and elements of Spain's canción and the Spanish guitar with African rhythms and percussion instruments of Bantu origin. Changui is considered a predecessor of son montuno (the ancestor of modern salsa), which has enjoyed tremendous popularity in Cuba throughout the 20th century.

@Holly - use thighs; season with salt pepper paprika (and I use turmeric, too, cuz why the hell not). brown the chicken, remove from pot, add butter a whole bunch of sliced onions, and some garlic if you want, season, saute until translucent, add the chicken back in, add stock, simmer for about an hour. remove the chicken, thicken the gravy with corn starch if necessary and whisk in sour creme to taste. serve over egg noodles. delicious.
