Best has worked tirelessly to preserve genetic diversity and the flavors rooted in the Southern Appalachian Mountains for over 50 years. He has collected over 1400 varieties of bean seeds, bringing back some from the brink of extinction. Bill shares with us his passion for collecting and preserving heirloom seeds along with sharing some family stories that are a fundamental part of keeping history alive and tasting delicious.

@dale there is a tortilla company in my town that uses a heritage variety of corn, grown somewhere in Maine I think. I don't know their source but now I'm curious. Monsanto is evil.

I'm just opposed to Monsanto patenting seeds/crops and forcing farmers into a sort of indentured servitude on the general principle of the matter.

dale that's part of the scam. the farmers can't legally propogate their own plants, but the assholes (ie monsanto) can sue farmers for growing their shitty plants without having bought them.

Pollen is in the air just as radio signals are. But if you deliberately try to breed out the plants from the edge of your field because you know they'll collect pollen from the patented plants adjacent, it's a type of unjust conversion of property. Same as if theeir cattle wandered onto your field and you kept them, or if you decrypted the radio signal and retransmitted it for profit.

@melinda That was something like 200 years ago. There are many new varieties of apple available now, so I'd say we're even. I just happened to recall it because I did some research into the history of hard cider some years back.

ken - i always though you had to but someone here said you don't have to. BUT - if you presoak and rinse you get rid of some of the startches that are hard to digest that cause flatulence. if you wanna toot, don't presoak.

just got an instant pot and you don't have to in there. 40 minutes of high pressure and it's done.
