Canoes as we know them were an invention of the Native Americans of the eastern woodlands who perfected using birch bark for a light, maneuverable, brilliantly adaptable craft really well suited to the rivers around here. Kayaks are an invention of the First Nation peoples of "Alaska" and "Canada" and are skin-on-frame boats adapted to the cold waters. Hunting craft. Less cargo room!
Variants exist worldwide, of course, and Indigenous populations in the Pacific Northwest also perfected canoes made of cedar logs. But that's the elevator-pitch history of what we call kayaks and canoes.
