mariano...there are two types. the blood dialysis done in a hospital or center 3 times a week is tough on the circulatory system and other areas. this type, peritoneal dialysis, is done at home, if you can learn it, and every night. It's challenging...and I hope he can handle it. Easier on the organs and a bit less restrictive as far as diet goes. We should Zoom about it one of these days. Fascinating! ;)

@mariano -- some years ago i was reading about Cuban food, cooking, etc. (but again, totally spacing out on the source!) -- author was talking about the Chinese influence on some of Cuba's regions due to the influx of Chinese workers who were brought over to build the railroads for crap wages -- and i immediately remembered all the "Spanish-American and Chinese" restaurants that used to be here in Hoboken, Jersey City, etc. and in NYC -- lotsa great food, but idiot me did not understand the Chinese/Latin American connection back then (sadly, so many are gone -- like so many other family owned small businesses, gentrification killed them too)

slugluv: Yeah, there are Chinese all over Latin America. A cousin of mine's wife is Chinese-Honduran. I was sad to see La Caridad closed, glad I got to go there.

The main minority in San Pedro Sula, where my family's from, is Palestinian, something like 20%. I grew up eating as much Palestinian as Honduran food. I can't think of a single non-Palestinian family I know down there in which someone isn't married to a Palestinian.

I read an interesting article years ago on that certain type of NYC taco joint run by Chinese, all with the exact same menu. Something about a tortilla-pressing machine invented in Mexico, then the company franchised to people in China.

$mall ¢hange: Yeah, it's crazy how full of Mexican food NYC has become in the last 20-30 years. In the late 90s there was Castro's in Brooklyn, on Myrtle, only legit place I knew of though I'm sure there were others scattered around.

Here in a Missouri suburb, Mexican/Hispanic* food can be pretty authentic, or a place that plays Billy Joel and seems like it's trying to be a 60s Mexican restaurant.

(* - Is there a better term for the restaurants that are more pan-Spanish speaking world than Mexican, because some of them are low-key Central American but with various Mexican items too)

Fresco Tortillas? I think that is the Chinese/Mexican chain. their menu looks like a takeout chinese joint, with the pictures etc. yeah. not good.

over the years have discovered Sunset Park, Sunnyside trucks, etc. there is def some legit Mexican in NYC but you have to search for it a lil. lotsa overpriced yuppie joints with a big margarita menu, that you can find

Tacos El Bronco was my late night jam, their truck on 38th and 5th ave in Park Slope was open til 5am. quite a few times after my show would swing by there.

btw I learned they closed at 5am the hard way once, drove out there, 5:10am haha

BH: Latino/x or Hispanic food maybe? In Spanish it's comida latina or comida hispana, sometimes comida típica, but it would sound weird to call it typical food in English lol ("Well that's just typical!"). I love how seemingly every awning on every Puerto-Rican diner in NYC says Spanish food. In New Orleans the main Hispanic food is Honduran/Nicaraguan. Mexican (and Indian) is pretty lacking down here.
